Incredible Garlic Chicken

: 3-4 (more with side dishes)
spices (salt, pepper, thyme, rosemary, bay leaves, etc.)
white wine/chicken broth
separated, with skins on
Preheat oven to 375 degrees Fahrenheit.
Wash chicken, pat dry with paper towel, rub inside and out with salt/pepper
Heat olive oil in a large skillet. Brown the chicken on all sides, then place in a large casserole or ovenproof Dutch oven.
Pour wine or broth into skillet, loosen the brown bits (deglazing the pan). Add liquid to casserole with chicken.
Sprinkle spices in - rosemary, thyme, bay leaves. Add all forty intact unpeeled garlic cloves. Not a typo.
Cover with lid, bake for 1.25-1.5 hours. Do not remove lid while cooking.
Serve cooked garlic alongside chicken - they can be eaten or squashed onto bread or whatever. It's awesome.
